Description

Objective of the analysis

Starch gelatinization analysis allows us to characterize the thermal behavior of starches during their transition to an amorphous state under the influence of heat and humidity. This phenomenon strongly impacts the texture, digestibility, water absorption, and solubility of the matrices.

This analysis is essential for:

  • Determine the gelatinization temperature and the associated energy (ΔH)
  • Compare native and modified starches, or starches derived from different plant sources
  • Optimizing industrial processes (cooking, extrusion, freeze-drying)
  • Adapting technical or food formulations (hydrated products, soluble powders, animal feed)

Methodology

The sample (powder, extract or starch-containing formulation) is subjected to a controlled temperature increase via:

  • Differential scanning calorimetry (DSC) : measurement of the heat flux absorbed during gelatinization
  • Rapid Viscometric Analysis (RVA) : measurement of viscosity as a function of the thermal profile
  • Optionally, microscopic observations can complement the analysis to visualize the loss of crystalline structure.
