Description
Objective of the analysis
Starch gelatinization analysis characterizes the thermal behavior of starches during their transition to an amorphous state, under the effect of heat and humidity. This phenomenon has a significant impact on the texture, digestibility, water absorption, and solubility of matrices.
This analysis is essential for:
- Determine the gelatinization temperature and the associated energy (ΔH)
- Comparing native and modified starches or those from different plant sources
- Optimize industrial processes (cooking, extrusion, freeze-drying)
- Adapt technical or food formulations (hydrated products, soluble powders, animal feed)
Methodology
The sample (powder, extract or formulation containing starch) is subjected to a controlled temperature increase via:
- Differential scanning calorimetry (DSC) : measurement of the heat flux absorbed during gelatinization
- Rapid Viscometry (RVA) : measurement of viscosity as a function of the thermal profile
- Optionally, microscopic observations can complement the analysis to visualize the loss of crystal structure.
Additional tests may be offered depending on the objectives:
Associated analytical techniques
- Differential scanning calorimetry (DSC)
- RVA viscosimetry
- UV-Vis spectroscopy (in case of colorimetric complement)
- Microscopic observation (option)
Application examples
- Quality control of food flours and starches
- Thermal stability study in formulations in animal nutrition or nutraceuticals
- Functional comparison of processed plant ingredients
- Technological performance analysis in food extrusions
At YesWeLab, we work with a carefully selected network of laboratories, most of which are certified and/or accredited (ISO 17025, COFRAC, etc.). These laboratories are chosen based on your specific needs, the matrices to be analyzed, and the analytical techniques required.
If you have specific requirements, please specify them in your request: our scientific team will assist you with precision and responsiveness.
Since 2020, numerous manufacturers, distributors, and formulators have trusted us to manage their analyses.
