Description
Glycemic index (GI) measurement assesses the impact of a food on blood glucose levels. It is measured through in vivo tests or calculated from the composition of simple and complex carbohydrates. Indirect methods include enzymology or ion chromatography. Matrices include food products, sugar extracts, and dietary formulations.
