Description
E471 comprises mono- and diglycerides of fatty acids used as emulsifiers. Its concentration allows for monitoring its presence in food or technical formulations. Analysis is performed by GC-FID after hydrolysis. Matrices include processed foods, lipid extracts, and industrial formulations.
