Description
Objective of the analysis
The oxidation stability of fats is a critical parameter in the development and marketing of products containing oils, butters, or lipid extracts. Under the influence of oxygen, heat, or light, lipids can degrade, generating undesirable volatile compounds (aldehydes, ketones) and a loss of sensory, nutritional, or functional quality.
The Rancimat or Oxipres test measures the oxidation induction time: this is the moment when degradation becomes rapid and significant.
Available methods
- Rancimat method: accelerated oxidation of a sample at a controlled temperature (90–130 °C) under a constant airflow. The induction time is measured by detecting volatile compounds.
- Oxipres method: measurement under oxygen pressure in a hermetically sealed chamber, simulating extreme oxidation conditions to compare different samples.
These methods are used in quality control, formulation R&D, or to estimate the shelf life of products containing fats.
