Description

The measurement of Salmonella spp. in 25 g of product is a reference microbiological analysis used to ensure the safety of food, veterinary products, and nutritional supplements. Performed according to ISO 6579 , this test identifies the possible presence of Salmonella bacteria , pathogens responsible for serious food poisoning. Their early detection is essential to prevent health risks, ensure regulatory compliance, and protect consumers.

Principle and objective of the analysis

The test is based on the qualitative detection of Salmonella spp. in a standardized 25 g sample. It aims to confirm or rule out the presence of the bacteria in a production batch. In the event of a positive detection, further analyses may be carried out to identify the strain and determine its origin (food, environmental, or animal).

This testing is mandatory for a large number of food and veterinary products, including meat, eggs, dairy products, compound feed, animal feed, and nutritional supplements. It meets the safety requirements defined by European regulations (Regulation (EC) No 2073/2005).

Analytical methods used

The detection of Salmonella spp. is carried out using different complementary approaches:

  • PCR (Polymerase Chain Reaction) : a rapid and specific molecular method, allowing the identification of genes characteristic of Salmonella spp .;
  • Research on selective culture medium : traditional step based on selective enrichment and the identification of typical colonies;
  • DNA sequencing (NGS) : for the in-depth characterization of detected strains, particularly useful in traceability or epidemiological studies.

The combination of these techniques guarantees high sensitivity and high reliability of results.

Areas of application

Salmonella test is essential in:

  • Human nutrition : quality control of raw materials, ready-to-eat foods or processed products;
  • Animal nutrition : verification of the safety of compound feeds and plant-based raw materials;
  • The nutraceutical sector : securing food supplements of plant or animal origin;
  • products and plant extracts : microbiological monitoring of batches intended for consumption or processing;
  • Surface and water control : preventing cross-contamination in production environments.

Regulations and compliance

The presence of Salmonella spp. is strictly prohibited in 25 g of finished product for many regulated categories. Therefore, the analyses are part of a HACCP approach and the food safety management plans required by European regulations.
