Description

Patulin is a mycotoxin produced by certain molds, particularly Penicillium expansum , frequently found in damaged fruits such as apples, pears, and grapes. Toxic to humans, it poses health risks, including immunotoxic, neurotoxic, and genotoxic effects. Therefore, its measurement is essential in processed fruit products. Patulin analysis is carried out using high-precision chromatographic methods: LC-MS/MS or HPLC-DAD, after liquid-liquid extraction. The matrices concerned include fruit juices, compotes, purees, syrups, plant extracts, and other derived products.

Regulations strictly regulate patulin content in foodstuffs, particularly within the European Union (EC Regulation No. 1881/2006). Manufacturers of fruit-based products must therefore guarantee the absence of contamination before placing them on the market. Implementing regular analytical monitoring helps meet quality requirements and avoid batch withdrawals or non-compliance.
