Description

Lupulone is a bitter compound (beta acid) extracted from hops, used for its antimicrobial properties and as a natural preservative in beverages. Its concentration is essential in brewing products, hop extracts, and supplements. Analysis is performed by HPLC with UV detection, sometimes coupled with mass spectrometry. Matrices analyzed include hop extracts, beers, and plant powders. The analysis also allows for the characterization of the bitter acid profile in addition to hops and humolone.
