Description
Glycemic index (GI) testing is used to assess the impact of a food on blood sugar levels. It is measured by in vivo tests or calculated from the composition of simple and complex carbohydrates. Indirect method using enzymology or ion chromatography. Matrices: food products, sugar extracts, dietary formulations.
