This analysis allows honey to be characterized according to ISO 12824: 10-HDA content (royal jelly), humidity, acidity, proteins, sugars, lipids. Performed by HPLC, spectrophotometry, titration and refractometry, it guarantees the quality, conformity and traceability of honey and derived products.
