Description
Vicine and convicine are two glycosides naturally present in fava beans (Vicia faba). Their excess presence can cause oxidative stress (favism). Their dosage is therefore important in food products and plant extracts. Analysis by HPLC. Matrices: beans, flours, legume extracts, fortified foods.
