Description

Gingerols and shogaols are the main bioactive compounds of ginger (Zingiber officinale), responsible for its pungent, antioxidant, anti-inflammatory and digestive properties.

Gingerols are present in fresh ginger, while shogaols are formed by dehydration during drying or cooking.

The dosage of gingerols and shogaols is essential for standardizing extracts, verifying the quality of food supplements or formulating functional ingredients in the nutraceutical, food or cosmetic sectors.

The analysis is carried out by liquid chromatography (HPLC or UPLC), often coupled with UV or MS detection, allowing fine quantification of the main derivatives: [6]-gingerol, [8]-gingerol, [10]-gingerol, [6]-shogaol, etc.
