Description

Activity is generally expressed in enzyme units (U), corresponding to the amount of enzyme that releases a certain quantity of product (tyrosine, peptides, etc.) per minute, under specific conditions (temperature, pH, duration).
The analyses are carried out in accordance with the protocols published in pharmacopoeias or validated internal methods (ISO, AOAC, etc.).
