MALDI-TOF ( Matrix-Assisted Laser Desorption/Ionization – Time of Flight ) detection is an application of mass spectrometry applied to the protein profiling of microorganisms. Each spectrum obtained is compared to a reference database, enabling reliable identification of the genus and species in minutes, whereas traditional biochemical methods require up to 24 hours.
This analysis covers a wide range of microorganisms, including major foodborne pathogens such as Salmonella, Listeria monocytogenes, Escherichia coli, Cronobacter, as well as numerous yeasts and spoilage molds.
